After enjoying different restaurants specializing in steak throughout the Basque Country, we went to the Casa Julian steakhouse at Tolosa hoping to enjoy a gastronomic experience superior to the rest. In addition to its already famous steak, Casa Julian also offers some of the best vegetables from Navarra and Euskadi. Spoiler: The result was as expected.
- FoodThe chop, with a great taste, melted in your mouth. It was also accompanied by some incredible piquillo peppers confit. Before that, we had some good dishes of asparagus, leeks and mushrooms, all of them with a light smoked touch. Among them, the leeks stood out, impressive. Unfortunately we also found some points against them, for example, the second chop did not have the same quality as the first one: although the taste was similar, the texture was different, it did not melt in the mouth so easily.
- ServiceAlthough the service in general was very good, they did not show us the steak before presenting it to the table, a common detail in many restaurants of this type. We also had to ask the origin (Germany), the breed (Friesian), the age of the animal (between 5 and 7 kg) and the maturity (30 days).
- LocalWith the renovation, the place has been updated, although to some extent it still maintains the charm of yesteryear. An aspect that differentiates it from other steakhouses in the area.

History.
The history of this mythical Basque steakhouse dates back to 1951, when Casa Julian opened as a store. Over time, the store became a bar and the bar became a restaurant. Julian began to specialize in different cuts of meat, specifically chops. To do this, in addition to looking for the best possible cut, he also perfected his grill. To accompany the steak he used raw materials typical of his land (Navarra), a clear example of which are asparagus and piquillo peppers. At the beginning of the 80’s, after showing him the secrets of his cooking, Julian transferred the business to Matías, an innkeeper from Tolosa. Today Matias and his 3 sons (Mikel, Iñaki and Xabier) are responsible for the Julian de Tolosa steakhouses that exist in Madrid, Tolosa and Tokyo.
