Bodega de Txakoli Hiruzta, a family’s effort to recover the essence of a town, Hondarribia.
The Hiruzta winery represents the effort of a family to recover what was once the origin of the most important variety in the production of Txakoli, Hondarrabi zuri. This variety is the heart of our beloved Txakoli, the only grape that the denominations of origin of Getaria, Bizkaia and Araba oblige to include, without it, the txakoli would not be txakoli. The Rekalde family has managed to bring this centuries-old tradition back to the city of Hondarribia, the birthplace of the Hondarrabi Zuri grape, an ambitious project that we have fallen in love with.
Hiruzta was created in 2007 on the slopes of Mount Jaizkibel, a strategic and emblematic settlement that has helped them to achieve great success among lovers of txakoli and good Basque gastronomy. Since the first harvest, produced in 2011, the advice of great winemakers such as Ana Martín Onzain and Pepe Hidalgo has been essential for Txakoli Hiruzta to make a place for itself in gastronomic establishments in more than 12 countries.

Hiruzta Vineyards and Winery
The 10 hectares of vineyards that Hiruzta owns under the Jaizkibel mountain and the winery’s state-of-the-art facilities are the key points of the Rekalde brothers’ project. Currently, they have a production capacity of approximately 150,000 bottles per year, a figure that we are sure will increase with the passage of time. Its proximity to France makes it a reference point for Basque wine tourism, the gateway to northern Europe.
The visit to the Hiruzta Winery allows us to learn about its history, walk through its vineyards, learn about the process of making txakoli and taste it through a tasting that is accompanied by local products. During the visit to the vineyards we had the opportunity to see how the grapes were harvested while we walked among the vines, thus beginning the process of the creation of Hiruzta txakoli.
At the end of the visit we tasted the two types of txakoli produced in this winery: Hiruzta and Hiruzta Berezia. Two high quality txakolis of which we leave you a small technical data sheet:
Basic data of txakoli Hiruzta
Denomination of origin: Getariako Txakolina
Grape variety: 95% Hondarrabi Zuri and 5% Gros Manseng
Type: White txakoli.
Alcohol content: 12%.
Basic data of Hiruzta Berezia txakoli
Denomination of origin: Getariako Txakolina.
Grape variety: 100% Hondarrabi Zuri.
Type: White txakoli aged in tank.
Alcohol content: 13.5%.
Hiruzta Restaurant
Seasonal, local and organic products, that is the secret of this restaurant, which, along with its grill, makes it one of the best restaurants in Hondarribia. With a capacity of 80 diners, the restaurant Hiruzta presents a great variety of dishes in its menu and menus, dishes that we have personally tasted, here are the best ones, stay tuned!
Turbot: Being a lover of a good cutlet, I have to confess that this is one of the best turbot I have tasted in a long time. The presence of the typical grill of the Guipuzcoan coast is noticeable in the kitchen of the Hiruzta restaurant.
T-bone steak: Although in this case I would opt for the turbot if given the choice. The cutlet was just right, both in its outer and inner layers, resulting in a perfectly cooked and high quality cutlet.
A detail that you should not overlook is the terrace of the restaurant Hiruzta, a terrace overlooking the natural park of Peñas de Aia, surrounded by vineyards and with a first class service.
Finally, we would like to highlight two details that caught our attention:
Recycling: In the same place where nowadays the Hiruzta winery building is located, the old quarry of Hondarribia (unused during the last years) has been given a new use, thus recycling important areas of Hondarribia.
Store: In the Hiruzta winery store, local products take center stage, products that often go perfectly with a good glass of Hiruzta txakoli.
As you can see, the Hiruzta complex is much more than a winery. A complex in which the culture, history and traditions of our people are valued and put in value.
