At the foot of the emblematic Ganekogorta massif, in the Biscayan town of Arrankudiaga-Zollo, we find Zolloko Taberna, a simple and humble restaurant, where some of the best traditional dishes of the Basque people are served. Zolloko Taberna represents one of the closest points of the mountain range formed by the Ganekogorta and Pagasarri mountains, 2 of the most emblematic mountains in the vicinity of Bilbao, a space, which is very attractive for all nature lovers. After enjoying a rainy morning, after 3 and a half hours on the slopes of Mount Ganekogorta, we moved to Zollo to enjoy its small gastronomic txoko.

Building: Zolloko Taberna is located next to a small rural nucleus where the fronton and the church stand out, 2 elements of great importance in the Basque society. The building that houses the restaurant, follows the typical structure of Basque farmhouses, a two-story structure, in which stone and wood predominate.

Location: Zollo-Elexalde is one of the neighborhoods that make up the town of Arrankudiaga-Zollo, a rural nucleus, located between the peaks of Ganekogorta (998 meters), Pagasarri (673 meters) and kamaraka (797 meters), an environment to get lost and enjoy nature. Zolloko Taberna is the only establishment that we find in this area, a restaurant that goes unnoticed for all those who do not know his good work in the kitchen.

Dining room: The dining room of the Zolloko Taberna restaurant is located on the second floor of the building, above the bar, a small and cozy txoko with barely a dozen tables.

History: Zolloko Taberna is the bar of the town, the municipal tavern of Zollo, a place that has been serving the inhabitants of this neighborhood for as long as they can remember. Martin Burgos, the current manager, took the reins of the establishment in 2003, raising it to the comfortable position in which we find it today.

Dishes: We leave for the end the most interesting section, the one that really matters, the gastronomic section. This establishment is known throughout Bizkaia for its beans, its stew and its steak, 3 dishes that we could not enjoy since we were in the middle of the San Martin holiday, a day in which the menu of this Bizkaia restaurant is closed, with no possible variations.

The menu of San Martines de Zolloko Taberna is composed of warm goat cheese salad, homemade black pudding and scrambled mushrooms, a few starters that are accompanied by 2 main courses, hake and cheeks. The dishes that make up this menu have no waste, good quantity, good textures and better flavors. All this at a price of 32 € VAT included. Thanks to this menu we have had the opportunity to taste dishes for which, otherwise, we would not have opted, but we will return, the stew, the beans and the Zollo chop await us.

 

Small details: Details are always appreciated, they are always appreciated. This was the case of Zolloko Taberna, an establishment where in addition to offering us a repeat of the cheeks, they invited us to the after-dinner shots.
