Txakoli is a white wine of great personality grown on the slopes of the Basque mountains.

Txakoli is largely made from 2 varieties native to the Basque Country: Hondarrabi Zuri and Hondarrabi Zerratia, without forgetting the red variety Hondarrabi Beltza.

A Txakoli made with grapes from Hondarribia Zerratia and fermented in barrels of fine-grained French wood… a real luxury! Unfortunately there are few bottles of this variety that are produced throughout the year. As they say… a tribute to their friend and colleague Eneko, a special txakoli for special people.

7 secrets to the success of the Gorka Izagirre Txakoli winery

Vineyards: More than 40 hectares of vineyards divided into 14 estates throughout 6 municipalities of Bizkaia form the vineyards of Txakoli Gorka Izagirre. Each plot (south-east facing slopes that often exceed 30% slope) has been planted and cultivated taking into account the peculiarities of its soil and climate, as you can see in the Gorka Izagirre Winery the quality of its raw material is the basis of its project.

Harvest: The harvest at the Gorka Izagirre Winery is done manually in 15 kg boxes, transferring the grapes to the winery within 4 hours of cutting to begin processing them before their quality characteristics are altered.

Team: Just as the union of the Basque people has kept the Txakoli winemaking tradition alive, the group of workers at the Gorka Izagirre winery work as a team to try to achieve their objectives with great success.

A young team, involved in the project, with specific training and free to create and innovate, this is how we could define the working group of the Gorka Izagirre Winery.

Innovation: Using the most advanced winemaking techniques, carrying out field tests and experimenting, this winery tries to elaborate a “special” Txakoli respecting the bases of traditional Txakoli.

The result is Txakoli 42 By Eneko Atxa, a txakoli made from Hondarrabi Zerratia grapes fermented in French wood barrels and aged in stainless steel tanks for a minimum of 6 months.

The winery: “A working tool equipped with the most modern technological advances in the wine industry”.

“The only thing that is essential to obtain a quality Txakoli is to obtain a harvest of excellent grapes and treat them in the winery with the same care as in the vineyard”.

The Azurmendi complex is impossible to understand without its creator, Eneko Atxa. This Basque chef has developed an extraordinary cuisine based on the gastronomic roots of his people and his creativity.

Visit the winery of Gorka Izagirre

To visit the Gorka Izagirre winery we have 2 options:

To make the visit with a minimum group of 10 people at a price of 10 € + VAT per person which includes the visit with tasting a glass of txakoli and Iberian ham accompanied by bread and tomato toast from our farmhouse.

– Visit with Prêt Á Porter menu and txakoli Gorka Izagirre: 50 euros + VAT.

Remember that both the restaurant and the winery take a weekly break on Monday.

The ambitious project of the Gorka Izagirre Txakoli winery gives us strength to believe in the recovery of Txakoli in the short term. We are happy to see that little by little the Txakoli wineries are becoming more professional, obtaining high quality juices, taking our wine tradition to the top of the world gastronomy.
