Taking the red txakoli as a representative product and Bakio as the essential land of cultivation, Doniene Gorrondona opens the doors of his winery.

 

Located in the Biscayan town of Bakio, between the sea and the inland mountains, we find the Doniene Gorrondona winery, a winery that occupies an old farmhouse dating from 1852 surrounded by very special vineyards. The vineyards are composed of Hondarrabi zuri and Hondarrabi beltz, two autochthonous grape varieties of the Basque Country with which our beloved txakoli is elaborated, the last one is difficult to see, as much as the product obtained from it, the red Txakoli, or in this case, the txakoli-gorri of Bakio.

As mentioned above, the baserri (Basque farmhouse) where the winery is located dates back to 1852, the year in which there is evidence that txakoli was already being produced in this area. Although it was not until the 1970s that txakoli began to be professionalized and commercialized, it has always been present in our farmhouses for self-consumption. The grapes used to make the wines of Doniene Gorrondona come from Bakio, from plots scattered on the slopes of the mountains that create the beautiful valley along the road that leads to the winery.

Txakoli gorri or red wine of Doniene Gorrondona: Doniene Gorrondona took the baton from our ancestors to continue making this traditional wine of the Basque people, a work that has guided him to become one of the few producers of red txakoli, and is that in Bakio, the red txakoli is a legend, a legend that was mentioned even in the songs:

Rarely do we find a large number of Hondarrabia beltz vines in the same winery, a grape variety that although it has its followers and unconditional fans, it is not the most demanded when it comes to making txakoli. A curiosity that caught our attention and that we fell in love with, a winery that follows and bets on the traditions of our land, the red txakoli from Bakio.

Doniene Gorrondona Team: Although our dealings were only with Andoni, the person who accompanied us during our visit to the Doniene Gorrondona vineyards and winery, the team of this Biscayan winery is made up of 4 people, the same people who make it possible to produce more than 100,000 liters of high quality txakoli year after year.

Wine tourism in Doniene Gorrondona: This winery has wanted to preserve the txakolinera tradition of tasting the wines in the winery itself, creating a variety of options adapted to the different profiles of its visitors. During these visits, they offer us to know in depth their vineyards and elaboration processes at the same time that we taste their famous txakoli. We recommend contacting the winery before making a reservation. In the more expensive visits we find the collaboration of the restaurant Gotzon Jatetxea, a restaurant located next to the beach of Bakio and near the winery of which we cannot give an opinion as we have not been lucky enough to enjoy their creations.

The visit consists of:

-Guided tour of the vineyard and winery, where the winemaking process is explained.

-Txakolis tasting.

-Option of different appetizers or menus depending on the type of visit selected.

Location of the winery Doniene Gorrondona: Located in the coastal town of Bakio, the winery Doniene Gorrondona uses its geographical location next to the Cantabrian Sea to give its wines a personality of their own. It is worth mentioning that the plots where their grapes are grown are south facing and are located in the valley that takes us back to the interior of Bizkaia.

Manual tasks: Given the climate and orography, most of the work carried out in the vineyards is done manually, a practice that does not exist in the vineyards found in the rest of the peninsula, where machines can do 90% of the work.
