During our stay in Vitoria-Gasteiz, we had the opportunity to enjoy one of the menus of Waska restaurant, a menu in which we found many attractive dishes and none disappointing.
The restaurant is surrounded by large gardens, in front of the Prado Park, near the Parque de La Florida and less than 10 minutes walk from the city center, undoubtedly a perfect location to taste the dishes of Carlos Davalos, head and chef of Waska restaurant.

The Waska restaurant is presented as a bar-restaurant specializing in tapas, pintxos, dishes and menus fetén, offering lunch menus and varied snacks in the evenings. Although we can not reveal the quality of the latter, we can confirm the quality of the menus offered, menus prepared with a lot of knowledge.

Dishes: Pampered dishes, careful presentations and very work flavors, this was how we described the dishes at Waska restaurant as soon as we left the premises. The dishes we tasted were part of a special menu composed for the long weekend of the constitution (December 5, 6, 7 and 8).

Chistorra crumbs with chickpea foam
To get a bite to eat:
Whole grain rice salad with bean sprouts, shitakes, sesame oil dressing.
Green asparagus tempura, sweet potato and orange hummus, parmesan and cod exqueisada.

Suckling pig confit with ginger and cloves, garlic pomade.
Grilled entrecote with roasted red peppers and wedge potatoes.
Confit of duck lacquered with soy and honey, pear and pepper puree.

We have the moral obligation to highlight two dishes from this menu, two dishes that amazed us.
Hake: What would you think if we say that we have tasted one of the best hake of our lives in the only province of the Basque Country that has no sea?
Many times, our readers ask us where they can eat good fish in the Basque Country, we, without hesitation, usually recommend the coastal towns of Bizkaia and Gipuzkoa, municipalities where they handle the grill better and where the fish is fresher, towns like Orio, Getaria, Bermeo or Lekeitio… well, from now on we must add a new area to this list, Vitoria-Gasteiz and Waska restaurant.
In this restaurant we had the opportunity to taste one of the best hake we have tasted in a long time, a hake, covered by a small refried garlic that was simple at first sight, but inside it hid a tender texture that betrayed its freshness while the refried sauce gave it the touch of perfection. This restaurant gave us a new lesson that we will not easily forget: Today, we can eat very fresh fish anywhere in the Basque Country.
Dessert: The dessert we chose was warm cheesecake and red fruits, a dessert in which flavor and texture came together to provide an incredible experience for our senses. The taste and the intermediate state between solid and liquid of this dessert was simply stupendous, hard to beat.
Local: The dining room, small, modern, cozy and adapted for people with reduced mobility was a perfect setting to taste the dishes that we describe.
The dining room of the Waska restaurant has a capacity of approximately 35 to 40 people.
Chef: Carlos Davalos is not only the owner of Waska Restaurant, he is also the chef of this Gasteiztarra restaurant. After studying at the Escuela Superior de Hostelería de Artxanda in Bilbao, he has been trained in the kitchens of great Basque chefs such as Juan Mari Arzak or Martin Berasategi among many others. You may know Carlos for his work in the Matteo restaurant in the Gipuzkoan town of Oiartzun, a restaurant where he laid his foundations for more than 5 years.
Attention: We were served by a very nice girl who made our stay at Waska restaurant very pleasant, she was the one who recommended the wine to accompany the food and who explained the dishes that were presented to us. At the end, we had the opportunity to talk to Carlos, a detail that is appreciated.
Price: The price of this menu is 30€, a fair price. A price that gives this restaurant a very good value for money.
Accreditation: Waska Restaurant has our exclusive “TurismoVasco Tiketa” accreditation, an accreditation that is not easily obtained.
We went to Waska restaurant without checking the opinions of its customers, without recommendations and without checking who was the chef of the restaurant … in short, blindly. But the exit of the restaurant was totally different, we left with all our senses stimulated and with a smile from ear to ear, a feeling that we recommend to all of you, do you dare to let yourself be carried away by Carlos Davalos and his restaurant Waska? As they say ….. Good product + Dedication + Love to work = Waska!
