From my humble point of view, the gastronomy of an area is always associated with its geography and tradition, in this occasion the Basque country has large fields where cattle can graze and good fishing ports, so we can eat good meat and fish without any problem.
A good T-bone steak, we have already talked in multiple articles about where to eat T-bone steak in Biscay or where to eat T-bone steak in Guipuzcoa, but now we are going to explain why this dish is typical, the Basque cattle tradition goes back to a very distant time, due to its large fields under the emblematic Basque mountains, behind this tradition hides the fame of the Basque T-bone steaks, we owe this dish to the rugged geography of the Basque country. We recommend a good T-bone steak with potatoes and some good Guernica peppers. We are sure you will not be disappointed!
–A good fish, with the fish happens as with the meat, there are many towns in the Basque country with tradition of fishermen, formerly the Basques were known as great whale fishermen, nowadays, the fishing is very scarce, but the little we have we can say that it is of quality.
